Healthy Asparagus and Bacon Breakfast

8 Aug , 2014

This is a very easy recipe that will be thoroughly enjoyed by every member of the family, not just because it looks tasty, but because it really is. Most of all, it is healthy and easy to make.

Ingredients needed (2 servings):

– 4 Eggs;

– 4 Slices of Bacon;

– 12 Asparagus Stems;

Instructions:

Wash and arrange the asparagus stems on a parchment paper in a pan. Arrange the slices of bacon and crack the four eggs open on top of the asparagus stems. Place in a pre-heated oven.  Bake at 180° C (356° F) for 20 mins. Enjoy your quick and yummy brunch! Serve with orange fresh and toasted bread!

Here are some interesting stats about asparagus that will make you rush to the local farmers market. Apparently 100 grams contain 20 calories and 5% potassium, 8% dietary fiber, 4% proteins, 15% Vitamin A, 9% Vitamin C, 11% Iron, 5% Vitamin B-6 and 3% Magnesium. Asparagus is loaded with nutrients and minerals that aid the ability of insulin to transport glucose from the bloodstream into cells. It is a herbaceous plant—along with avocado, kale and Brussels sprouts. It helps break down carcinogens and free radicals. It also has anti-ageing properties and helps the brain fight cognitive decline. I hope these powerful health benefits will encourage you to incorporate asparagus in your meals more often.
